There was this little restaurant I worked at in a small ski town in southwestern Colorado in my late 20’s. The restaurant was a Chipotle-style restaurant, where customers would come up to the line to order burritos or tacos, get the fillings, and build as you go. I worked there for 5 years, and have so many fond memories of that place. One of my favorite things was chatting with the people who came through and asking them what they were up to that day. I heard responses about hiking new hikes, exploring new areas, skiing new mountains, and even a couple who were flying to Costa Rica that afternoon to continue building their tree house vacation rental spot. In the winter, if it snowed more than 6 inches overnight, the boss would call a “powder day” and you would have to come in for a few minutes early, prep some things, and then you were allowed to go ski for a couple of hours. The restaurant was opening late that day, and the whole town was on board, celebrating the fresh snow. The sense of community, the friends, the excellent, freshly made mexican food…I loved almost every minute of it there.
